Evelyn Tsui has asthma since she was three. To prevent it being triggered, she tried some food that claims to mythically ease or cure asthma and avoided doing any exercise. However, when she reached 11 years old, her asthma outbreaks became more frequent than ever. She was sent to Emergency room twice within several months and she was hospitalized for four days. She learned that she has to avoid certain food that irritates her bronchus; she should also exercise regularly to strengthen her respiratory system. She overcame her hydrophobia and started to develop a routine of swimming once a week. Since then, her asthma is under control. She realized that a careful choice of diet and regular exercise is the key rule to prevent many chronic diseases, which we have always neglected in this fast food culture. As our health is the most important element in life and she became determined to become a dietitian.
In 2005, to purse the best out of her education, she learnt to be on her own for the first time and came to United States to study. She studied at a community College, De Anza College in San Jose, California for two years. She is now a Senior majoring in Clinical Nutrition at University of California, Davis, expected to be graduated by June 09. She will become a Registered Dietitian afterwards and wants to work in the field of public health to promote nutrition education or disease prevention.
